Blessed are the Beasties

I promised the locusts, I mean my co-workers that I'd bring something into work Wednesday for them to feed ...I mean sample. I've been meaning to make something with The Beast ever since that day I forgot to feed it, just to make sure it was still alright. During one of the feeding sessions earlier this week I felt like the activity level had kind of died down and I was worried that the batch was on it's way out. Not quite sure what I could make with it, and since Tom refuses to be the pancake guinea pig anymore...not that I blame him, sourdough/rye pancakes with lemon and vanilla was not one of the more successful breakfasts around here.

I'm going to try using my pancake batter (the good recipe) to make a kind of oven-cake... please pardon my lack of a better way of explaining this. I was thinking that if I used a mold ring, (why does mold ring sound wrong?) and poured batter in as high as the mold ring would go, since the batter has baking soda in it, it will rise high, creating a type of cake. Something that can't be called a crepe or a pancake but still having the familiar taste of both. I think I'll saute apples in butter and nutmeg syrup, make dulce de leche and serve the cakes with the apples and dulce de leche finishing off with a healthy sprinkle of powdered sugar. I only hope I can achieve what I'm picturing in my mind...wish me luck.

I made the batter Tuesday evening so that it could have a chance to mellow overnight and I'll make the cakes just before I leave for work on Wednesday. My work day starts at 4 pm, so I'll have plenty of time in the morning to mess this up make a fabulous treat for everyone. I'll post the results... even if it turns out bad on Thursday morning.
